Ingredients and spices that need to be Prepare to make Chole masala:

  1. For boiling chole
  2. 300 g raw chickpeas (soaked in water overnight)
  3. as per taste Salt to taste
  4. 200 ml water + 1 tsp tea dust Tea decoction
  5. 1 bay leaf
  6. 1-2 green cardamoms
  7. few Few black peppercorns
  8. 2-3 cloves
  9. 1/2 tsp garam masala
  10. as required Water covering 1 inch above the chole
  11. For making masala paste
  12. 1 small onion
  13. 1 small tomato
  14. 1 tbsp ginger garlic paste
  15. as needed Salt
  16. 1/4 th tsp turmeric powder (optional)
  17. as per taste Red chilli powder
  18. 1/2 tbsp coriander powder
  19. 1/2 tsp cumin powder
  20. 1/2 tsp sugar
  21. 1/4 th tsp black salt
  22. 1 tbsp chole masala
  23. as required Water/ Preferably add preserved chole Water
  24. For boiled chole marination
  25. 1 small onion (cut into slices)
  26. 1 medium size tomato (cut into slices)
  27. 1 tbsp ginger (grated)
  28. 2-3 green chillies (slit)
  29. as required Coriander leaves (finely chopped)
  30. as required Salt if required
  31. 1/4 tsp turmeric powder (optional)
  32. as per taste Red chilli powder
  33. 1/2 tsp chole masala
  34. For yummy chole masala you will need
  35. 1 tbsp ghee
  36. 1 tbsp oil
  37. as required Prepared masala paste
  38. as required Marinated chickpeas
  39. as required Preserved chole Water
  40. as required Coriander leaves for garnish
  41. some little toasted garlic pieces to enhance taste

Steps to make to make Chole masala

  1. Boil soaked chickpeas with the above-mentioned ingredients for 6-7 whistles.
    Let it come to room temperature and release pressure.
  2. Next prepare masala with the above-mentioned ingredients and keep aside.
  3. Next take the boiled chickpeas. Strain and preserve the flavoured water for later use.
    Now in a mixing bowl take the strained chickpeas, add onion slices, tomato slices, slit green chillies, grated ginger and chopped coriander leaves.
    Next add salt as needed, turmeric powder, red chilli powder and chole masala.
    Mix well and keep aside.
  4. Next heat kadhai with ghee and oil. Add the prepared masala and cook it.
  5. As masala leaves oil, add the marinated chickpeas and give a nice mix.
  6. Let it be on medium heat for some time. Then cover and cook in slow heat for some time so that all flavours combine well with each other.
    Next open cover and add the flavoured water that you had preserved gradually and cook for some time.
  7. Next add some more water.
    Put some more coriander leaves, mix well and cook to maintain the consistency you prefer.
    Cover and let it settle for some time till you serve it hot.
  8. This flavoursome chole masala goes well with rice/ roti/ paratha/ poori

  9. NB: If you like a darker shade of the chole masala then omit the use of turmeric powder.
